Bilo-bilo

A warm comforting dessert from the Philippines !


Hello dear readers,


Bilo-bilo means little balls in Filipino and is a warm delicacy eaten as a dessert or a merienda (afternoon snack). The bilo-bilo balls are chewy and pairs beautifully with the texture of the sweet potato.

Ingredients (for 4 persons)


- 200g (1,5 cups) sticky rice flour

- 500 ml (2 cups) coconut milk

- pinch of salt

- Optional: pandanus leaf - tied into a knot to bring out flavour

- 300 g (2 cups) tapioca balls - medium sized

- sugar - start at 1 tablespoon and estimate more as needed (I used 3 in my recipe)

- 1 medium sized Sweet potato - peeled and cubed the smaller the better

- jackfruit - fresh or canned - 4 pieces - cut in tiny cubes

 

Procedure

  1. Boil the tapioca balls in water until transparent (between 15 to 30 minutes). Keep adding water as needed and bring the heat down to medium setting. Keep stirring and do not leave unattended. Rinse and put aside.

  2. Put the glutinous rice flour in a container and add a bit of water till it becomes a dry paste. Then wet your fingers. Get a tiny portion of the flour and roll it in the palm of your hand till you make 2 cm tiny balls. These are the bilo-bilo.

  3. Heat the coconut milk till it reaches a slight boil and add the pandanus leaf till your kitchen is perfumed by its aroma or not more than 10 minutes.

  4. Remove the pandanus leaf and add a pinch of salt, the sugar, the bilo-bilo and the rest of the ingredients.

  5. Increase heat and stir for one minute.

  6. Serve hot when the sweet potato is soft
