Homemade fish sticks & tartar sauce

A delicious alternative to industrial fish sticks with an addictive sauce!

Hi !

My husband’s favorite dish is fish sticks, with tartar sauce and spinach. I suggested to make the fish sticks and tartar sauce homemade as it is much healthier and tastier: it was a big success!

Here’s how:


Fish sticks (4 persons)

Ingredients:

- 400 g (14 oz) cod;

- 130 g (1 cup) plain cereal (like Kellogg’s);

- 1 tbsp garlic powder;

- 1 tsp (or more) salt;

- 1 tbsp paprika (optional)

- Ground black pepper;

- 3 eggs.


 

Procedure:


  1. Pat the cod with a sheet of kitchen roll, add salt then put it in a container and store in the fridge for at least 30 minutes (it will remove the « fishy » taste).

  2. Process the Kellogg’s cereals in a food processor and add spices until it becomes a a fine(ish) powder.

  3. Crack the 3 eggs in a bowl and mix, add some salt.

  4. Get the cod out of the fridge and slice in strips.

  5. Dip the cod in the egg mixture, then in the cereal and put on a plate.

  6. Preheat your air fryer to 180° C (356 F) (or your oven) and grease it with some olive oil.

  7. Carefully place the fish sticks in the air fryer and cook for 12 minutes (add 15 minutes more if cooked in the oven).


Tartar sauce (4-5 persons)

Ingredients:

- 75 g (1/2 cup) pickles;

- 75 g (1/2 cup) capers;

- 1 small shallot;

- 75 g (1/2 cup) finely chopped parsley;

- 1 egg yolk;

- 1 tsp mustard;

- 1 tbsp vinegar;

- 2,5 dl (1 cup) neutral oil;

- Salt and pepper.



 

Procedure:

  1. Chop finely your pickles, capers, shallot and parsley;

  2. In a separate bowl add the egg yolk, mustard, vinegar, salt and pepper then mix;

  3. Gradually add the neutral oil and keep whisking! The mixture will become lighter and thicker. This is a basic mayonnaise.

  4. Add the above mentioned chopped ingredients to the mayonnaise and correct the seasoning.
