Japanese glazed eggplant

A delicious way to eat this veggie!


Hello dear readers,


I love making this recipe, it is easy and makes the eggplants so tasty! They are sweet and tangy, you won't regret cooking these.


Ingredients:

- 2 eggplants;

- 2 tbsp olive oil;

- Sesame seeds (for decoration);

Glaze

- 4 tbsp soy sauce (I prefer to use low sodium);

- 2 tbsp mirin;

- 1 tbsp cooking sake;

- 1 tsp rice vinegar.

 

Procedure:

  1. Preheat your oven to 200 degrees C° (392 F).

  2. Remove the stem and bottom of eggplants. Cut them in half, lengthwise.

  3. With a knife, score them diagonally.

  4. Place a parchment paper on your oven tray and add olive oil in 2 spots. Place your 2 eggplants parts (flesh down).

  5. Cook in the oven for about 20 minutes until the eggplants are fully cooked and feel soft.

  6. Once cooked, mix all the ingredients of the glaze and brush your eggplants with it.

  7. Put the eggplants back in the oven (flesh up this time) and broil for 5 minutes.

  8. Top with sesame seeds.
