Pasta a la Vincenzo

This is my husband's favorite pasta recipe. It's super savory !


Hello dear readers,


When I first met my husband, one of the first dishes he made for me was Pasta a la Vincenzo and I was impressed. The recipe is simple yet very intriguing, it is a mix between the hot pasta and the cold dressing, you cannot qualify it either as pasta salad nor as traditional pasta.

This recipe serves 4 people.

Ingredients:


- 3 cloves of garlic (or more if you're a garlic lover like my husband is!);

- half a bouquet of basil;

- 4 juicy tomatoes ;

- 125 g (1 ball) of mozzarella di buffala;

- 5 tbsp extra virgin olive oil;

- 450 g of pasta of choice ;

- 4 slices prosciutto di parma (or San Daniele);

- salt and pepper.


  1. Mince the garlic gloves finely (we use a garlic press).

  2. Dice the tomatoes and add to a bowl with the minced garlic, olive oil and salt / pepper. Let the mixture rest for 30 minutes (not mandatory but will intensify the flavor).

  3. Dice the mozzarella and add to the mixture.

  4. Cook your pasta according to the packet directions.

  5. Once your pasta is cooked add in a bit of olive oil so it doesn't stick. Top it with the sauce, parma ham and enjoy.
