Chicken and pork belly adobo

Adobo is quintessentially Filipino and each home has its own recipe.


Hello dear readers,


Chicken and Pork Belly Adobo is one of the dishes that I have grown up eating, and making for my family. It is simple in its ingredients and not difficult in the procedure.

Ingredients (for 4 persons):


- 2-3 cornish hens (“coquelet" ) or 1 big chicken

- 300g (1,5 cups) of pork belly cubed

- 150g (3/4 cup)soy sauce

- 100g (1/2 cup) vinegar

- 4 bay leaves

- a few peppercorns

- 2 cloves of garlic


 

  1. Clean your Cornish hens/Chicken by rubbing salt and half lemon then rinse;

  2. Cut the Cornish hens/Chicken into small pieces (wings, legs, thighs, breasts in 3, back in two pieces);

  3. Put Cornish Hens/Chicken and cubed pork belly pieces in a pot together with the rest of the ingredients and bring to a quick boil.

  4. Simmer over low heat with the lid covering the pot for an hour or more till it is soft and practically falling off the bone

  5. Serve with rice.
