Procedure

  1. In a medium high wok (or big pan) add the olive oil.

  2. Add diced onions, minced garlic cloves and grated ginger. Cook until translucent.

  3. Add the rinsed lentils, can of tomatoes, water, coconut milk and all the spices and let simmer until red lentils are cooked (circa 20 minutes).

  4. Serve hot and garnish with coriander.

Naan:

Serves 2 persons

Ingredients:

- 1 yogurt;

- 1 cup flour (use yogurt cup as reference);

- Salt;

- 2-3 tsp creamy cheese of choice (I chose saint-Moret which ressembles Philadelphia);

- 2 tsp butter;

- Cilantro

Procedure:

  1. Mix yogurt, flour, salt until a ball forms and let rest for 1 hour.

  2. Separate the dough into 4 to 5 balls and roll them into small pancakes.

  3. Add a dollop of the cheese to the pancake and create a ball then roll it out.

  4. Melt butter in a pan and fry the naan

  5. Put aside some melted butter to brush the naan with some cilantro.

Enjoy!
