Salmon sinigang (tamarind soup)

A typical filipino dish


Hello dear readers,


This week, Mamali is back, with a beautiful and traditional dish from the Philippines, salmon sinigang.


This serves 2 big eaters or 4 small eaters:


- 2 salmon steaks;

- 1 tbsp neutral oil;

- 3 cups water;

- 3 tbsp tamarind powder (available in any Asian store);

- 4 cherry tomatoes cut in half;

- 1/2 onion - sliced lengthwise;

- a handful of string beans;

- two handfuls of spinach.


 

  1. Rinse the salmon steaks with running water and pat dry with kitchen paper and set aside.

  2. Heat a medium sized pot and add the neutral oil. Sauté the cherry tomatoes and onion slices till transparent.

  3. Add the water and tamarind powder and stir.

  4. Bring to a slow boil and then add string beans and after five minutes the spinach leaves.

  5. 5. Cook till string beans are less crunchy.

  6. Lastly add the salmon steaks and lower the heat to the minimum. Simmer for five minutes and serve with rice. You may add fish sauce, small quantities at a time to correct the seasoning, or use plain salt to taste.
