The mix between a summer treat and winter spices! All without butter!
Hello dear readers,
This recipe is the perfect combination between a summer treat with a holiday spark!
The base is a simple cake base but I swapped the butter with bananas.
Ingredients:
- 275 g (9.7 oz) mashed ripe bananas (2 medium bananas)
- 1 sliced banana (length wise) for decoration
- 50 g (1.7 oz) sugar
- 50 g (1.7 oz) brown sugar
- a pinch of salt
- 1 tsp vanilla extract
- 3 eggs
- 260 g (9.17 oz) flour
- 1/2 tsp baking soda
- 1 tsp baking powder
- 2 1/2 tsp cinnamon
- 1/2 tsp ground cloves
- 1 tsp ground ginger powder
- 1/4 tsp cardamom powder
- 1/4 tsp ground coriander powder / cilantro
Preheat your oven at 180 degrees celsius (356 degrees Fahrenheit);
Mix all ingredients in this order except the sliced banana;
Add the mixture in a greased rectangular cake mold (about 35 cm length) and add sliced banana on top;
Cook for 30 to 35 minutes.
Your house will smell like winter holidays !
