Vegan chocolate mousse

An easy recipe for a quick and delicious dessert!


Hi dear readers!


This time, I wanted to make a vegan dessert, easy to make and a crowd pleaser! This mousse contains no eggs but instead uses Aquafaba i.e. the liquid of chickpeas! You can whip up this liquid and it will not taste at all like chickpeas.


Ingredients:


- Liquid of a big can of chickpeas (175g / 2dl / 3/4 cup);

- 1,5 tbsp sugar;

- 150 g (1 cup) dark chocolate (I used 75%) + 20 g (2 tbsp) for the decoration;

- Salt (taste the mousse first!).

 

Procedure:


  1. Store the liquid of the chickpea can in the fridge, as well as your mixing bowl.

  2. Once cold, whip the aquafaba (chickpea liquid) with a hand mixer until a white foam forms (high speed and at least 5 minutes), then add the sugar and continue to whip.

  3. In a double boiler, melt the chocolate (150 g), let cool for a few minutes.

  4. Add the melted chocolate to the aquafaba and delicately mix.

  5. Add the mixture in glasses, and put in the middle some chopped chocolate (20 gr) to add texture.

  6. Put in the fridge to solidify for at least 2 hours.
